How long do alfalfa sprouts have to germinate and how long can they be kept?
The sprouts should be ready for consumption after seven days. Do not harvest them earlier, as they produce a substance called canavanine. This is not easily digested by humans and animals and breaks down in the plant after the seven days.
After 7 to 8 days you can safely enjoy the sprouts.
After germination, the sprouts can be kept in the refrigerator for a few days. Make sure they stay fresh and do not develop mould.
Can I eat alfalfa sprouts raw and what do they taste like?
