The meat should always be fresh and of good quality. Just like with a steak, you can quickly taste the difference between a piece from factory farming and an organic piece. You should also make sure that the meat is well marbled. This prevents it from drying out quickly on the grill and guarantees a juicy result. One type of meat that is not suitable for use with the spit is fish. Due to its fragile consistency, it will promptly fall off the skewer when you try to put it on. However, other seafood, such as prawns, are ideal for skewers because of their firm consistency. The following types of meat are particularly suitable for skewers:
