Despite the variety of classifications, we can highlight two main branches into which we will group all the subtypes of honey according to their origin. Flower honey. This type of honey comes from the nectar of flowers. It can be monofloral, meaning that it comes from one type of flower such as the orange tree; or it can be multifloral which refers to it being made from the nectar of different flowers, without paying attention to their proportions. It is a bit more liquid and takes longer to solidify.

Honeydew or honeydew. Also known as forest honey. It is characterised by the fact that the bee uses the secretions of other insects that consume sap and tree leaves. This type of honey is dark in colour and solidifies more quickly. The most popular honey comes from pine trees and its taste is influenced by the tree or bush it comes from, and can even be salty.

Processing

Raw honey. This is 100% natural honey, this variety has not gone through any chemical process or only minimal processes such as filtering or a little heat. Processed. It is easy to find, just make sure it is from a reputable producer who will guarantee that the honey is completely free of bacteria. They usually go through pasteurisation and filtering processes. We recommend this type of honey for small budgets or if you can't eat organic or artisanal products.

Amount of water

This is a bit difficult to verify for the average consumer. However, if your love for honey goes beyond that, don't leave out this option. In the case of processed honey, you can check the label to see the amount, while for natural honey, you can use a honey refractometer, which are simple and inexpensive.

Cream. Strictly speaking, this is the same honey extract that crystallises after a certain time of rest. The speed of this process depends on the amount of fructose, water and temperature of the honey. This presentation is preferred for cosmetic or external applications in general.

Harvesting
