Facts worth knowing about muesli
Muesli is a preparation of oat flakes and other cereal-based products as well as fruit or dried fruit, usually eaten with either milk, soy milk, yoghurt or fruit juice for breakfast.
In the trade, the term muesli usually refers to ready-made mixtures of breakfast cereals, grains, sultanas, dried fruit and nuts. They are often enriched with additional vitamins and minerals.
The so-called breakfast cereals are among the most fortified foods, as a study of the project Building a Swiss Nutritional Database revealed. They therefore count as functional food.
According to Stiftung Warentest, the "fruits" of most ready-mixed cereals in 2006 consisted mainly of sultanas, which are cheap and sweet. Crunchy muesli contains a substantial amount of sugar.
History of muesli
We have the Swiss doctor Dr. Maximilian Bircher-Benner to thank for the most wonderful of all breakfast varieties. In the beginning, however, it was less about enjoyment and more about a balanced diet.
About the origin of muesli: If you believe history, a primal mix of grains was already mentioned in the Bible as a satisfying meal, and according to the latest findings, there is evidence that people as early as the Stone Age made a kind of muesli themselves.
Let's go back to Dr. Bircher Benner. The muesli that we like to enjoy for breakfast today was invented by the Swiss doctor Dr Bircher-Benner. It all began in Switzerland when the doctor and nutritional reformer Maximilian Oskar Bircher-Benner was entertained by a dairymaid on an alpine pasture.
According to stories, he discovered his apple diet on a mountain hike in the Alps, when a dairymaid fed him a raw food meal. Alpine herdsmen had been eating this puree, which consisted of oat flakes, apples, nuts, lemon juice and sweetened condensed milk, for more than a hundred years.
From 1902 onwards, Dr Bircher-Benner tried to introduce the guests in his Zurich sanatorium to a wholefood diet with fresh fruit in this way - and he certainly succeeded. At that time, Birchermus was still served as an easily digestible evening meal.
Bircher-Benner is considered a pioneer of wholefood nutrition. Originally, he was convinced that unprocessed raw vegetable food, as used for muesli, contained "biologically effective light quanta" from which the body could gain "life force", which later turned out to be wrong.
As a representative of vegetarian raw food nutrition, the most important thing for Bircher-Benner was the freshly grated apples with skin and core, not cereal flakes.
He used condensed milk because fresh milk, unpasteurised in his time, posed a high risk of tuberculosis. In the meantime, the production methods for oat flakes have also improved. The fine flakes available today only need to be soaked briefly. The nutritional reformer Bircher gave numerous lectures on raw food nutrition, promoting his apple diet.
The breakthrough of muesli
The first breakthrough and initial popularity of Bircher muesli in the German-speaking world came from the countless cookbooks and writings by members of the Bircher family. As early as the 1920s, the apple dish was on the menu of various restaurants.
At first, Birchermus only became really popular in Switzerland. From the 1940s and 1950s onwards, Birchermus was a regular dinner dish. It was regularly on the menu in the kitchens of prisons, homes, convents and the military.
With its popularity, recipes soon appeared that differed from the original. Oatmeal was increasingly replaced by dry mixes, which had been produced industrially since the early 1940s. Condensed milk was replaced by yoghurt, milk or cream.
At some point, however, apples were no longer essential for muesli enjoyment. Since the 1950s, muesli has been available as a ready-made product. At that time, muesli fans still had to go to health food shops or special shops to buy breakfast muesli. In the 1970s, mueslis increasingly made it onto supermarket shelves.
Muesli was no longer just a dietary food and did not have to be freshly prepared every time, but was rediscovered from many sides, whether in the political context of the eco-movement, by athletes, mountain climbers or the first convenience fans.
Muesli is now world-famous. It is now loved in most parts of the world and it is impossible to imagine everyday life in many countries without it. The market is constantly growing and developing new tasty varieties.
Muesli in ever new variations
Since muesli gave its name to a way of life in the 1980s, the range of different varieties has grown steadily. There are mueslis whose ingredients can be traced by the consumer via QR code, mixtures with ancient grains such as spelt, emmer and einkorn, unusual flavours such as matcha, the green tea powder from Japan.
Regional products are also becoming increasingly popular.
In addition, gluten-free and vegan products are also increasingly consumed. Gluten-free mixes usually consist of various cereal flakes mixed with dried fruits or chocolate. Amaranth and quinoa play a major role here. The so-called pseudo-cereals are gluten-free. Vegan products contain neither honey nor dairy products.
Breakfast porridges made from finely ground cereals in particular are making a comeback. They can be eaten immediately, hot or cold, and cumbersome and lengthy overnight soaking of the grains is now a thing of the past.
