The traditional pizza oven shines with its authenticity. The exterior cladding has a rustic look and is particularly convincing as a fixed installation, so you automatically feel like you're at your favourite Italian restaurant. The stone oven also scores with its perfect heat storage. In addition, it distributes the heat perfectly in the cooking space and at the same time the stones are very durable. Combined with a stone plate that extracts liquid from the pizza, the Italian dough patty becomes beautifully crispy and there are no soft spots in the middle.
Disadvantages are the slow heating and the rather time-consuming maintenance. A stone oven needs to be cleaned properly and often, you can read about the treatment methods under Trivia. Mobile stone ovens are a great rarity, because the weight would be too high, so this oven would be the wrong option if you are looking for mobility.
What is a metal oven and what are its advantages and disadvantages?
More and more often you see pizza ovens made of metal, with stainless steel being the most common material. For the interior, the better models use fireclay bricks or cordierite.
These heat-resistant stone plates conduct and store heat optimally. However, there are also metal ovens that are equipped with a metal plate on the inside; the advantage here is the enormously fast heat-up. A big advantage of the oven is that the high-quality material looks good and is also very easy to clean. The right metal makes your pizza oven resistant to heat or moisture, so you can leave it outside permanently. There are disadvantages when it comes to insulation. It can happen that the outer metal gets extremely hot and can lead to burns. Therefore, you must be careful if children or pets live in your household. Incorrect handling can also cause the metal to warp or bend.
What distinguishes an electronic pizza oven and what are its advantages and disadvantages?
These types of pizza ovens are easy to use and reach high temperatures in a short time, although they do not reach the maximum temperatures of stone or metal ovens.

Electronic pizza ovens also fit into any kitchen because of their compact shape.

As already mentioned, there are pizza ovens made of different materials, which differ in terms of weight, design and heat insulation. The most common garden pizza ovens are stone or iron. You can read about the individual advantages and disadvantages in our decision section, but here we will only give you a rule of thumb: Make sure that the base plate of your pizza oven is made of fireclay bricks or cordierite and that they are food-safe. Fireclay bricks from the industry are not recommended, as the risk that they may contain chemical residues is too high. Rock wool is suitable for insulation; it stores heat very well and reduces the number and size of hairline cracks in the material.
Type of heating
Stone and metal ovens are traditionally heated with wood.
The wood provides the classic aroma, but wood firing requires a great deal of sensitivity.
Especially in the beginning, it can be difficult to get a feeling for the right temperature. In addition, cleaning is much more time-consuming than with gas models. Wood-fired ovens can be fired directly as well as indirectly; you can find out how this works in the next purchase criterion. Alternatively, there are gas ovens that are heated exclusively with direct heat. These pizza ovens are more expensive than those with wood, but both the easy ignition and the simple temperature control speak for the gas version.

Cleaning after baking is also much easier, as neither ash nor soot remain. For the compact electronic pizza ovens, electricity is used, as the name suggests. Heating coils can be used to generate top and bottom heat, which is very easy to control. On the other hand, the high temperatures that you can achieve with wood or gas are not possible.
For traditional wood firing, there are two ways to get the stove up to temperature:
- direct firing
- indirect firing
For stone ovens in particular, direct firing is usually used. Here, the fire is lit directly in the baking chamber. This heats the floor, the walls and the air. As soon as the desired temperature has been reached, the fire is moved to the rear part of the oven. The food is baked in the front part, wood can then only be added with difficulty. The indirect firing method is often used for metal ovens. Here there are two chambers, the fire is lit in the lower chamber and the food is prepared in the baking chamber. The separate chambers make it easier to add wood and the food cannot come into contact with flames or ashes.
The right temperature is essential for pizza baking. Your garden pizza oven should reach a minimum temperature of between 350 and 450 degrees, which is the perfect temperature for preparing your pizza like an Italian. The maximum temperature is very high with stone ovens, which can easily reach 500 degrees. It is also possible to reach similar temperatures with metal ovens. With good electronic pizza ovens, temperatures of up to 400 degrees can be achieved.
The cooking time depends on the temperature to which you can heat your pizza oven for the garden. In general, the higher the temperature, the shorter the preparation time. However, if it takes a little longer and it gets a little chilly in the evening, we recommend that you take a jacket or jumper with you, as most ovens do not give off much heat. At extremely high temperatures, a pizza can be baked in as little as 90 to 120 seconds; the only important thing here is to be able to determine the temperature precisely. Therefore, we also recommend an infrared thermometer, as the temperature indicators on the oven doors are often relatively inaccurate.

How do I clean my garden pizza oven properly?
To enjoy your garden pizza oven for a long time, you should clean it after each baking session. It is best to use an oven brush to remove food residues from the fireclay brick, but you can also wash it with water. Only use soft cloths for this and no cleaning agent, as this would only damage the stone! For an intensive basic cleaning, simply heat your garden pizza oven to maximum temperature and let it burn for at least one hour. Dirt and food residue will simply burn off, so you can simply sweep the residue out. You should also clean the inside and outside of the chimney at regular intervals. Brushes made of natural fibres are perfect for stubborn dirt.
