There are 3 types of rice flour: white rice flour, wholemeal rice flour and glutinous rice flour. These types differ in their production and partly also in their baking properties.

White rice flour is obtained by grinding polished rice grains, usually from the well-known long-grain rice. This flour does not have much flavour, but is very fine and light. It is therefore suitable for light pastries such as bread, cakes or biscuits.

For wholemeal rice flour, which is also called brown rice flour, you need unpolished rice grains. The grains are ground with the husk. As a result, the finished flour has more vitamins and minerals. It also has a full-bodied and nutty taste.

Glutinous rice flour is made from Japanese glutinous rice, also called mochi rice. It has a high starch content and is therefore stickier than other rice flours. This means that less or no binding agent is needed in baking.


When looking at the origin of a product, one can distinguish between the origin of the ingredients, in this case primarily the rice, and the place of production.

If you attach great importance to regional products, you should choose a product that both sources the ingredients from Germany and handles the production there. In contrast, there are also many products to choose from that come primarily from Asia or from other European countries.


It is true of all varieties of rice flour that they are gluten-free. Therefore, these products are safe for all people with gluten intolerance and the corresponding symbol can be found on many packages.

Can I use rice flour instead of wheat flour?

If you have to replace wheat flour in a recipe due to a gluten intolerance, rice flour is generally a good choice. However, you should not substitute it one-to-one if it is a pastry that needs to rise in the oven. Since rice flour lacks gluten, this would not happen if you only use rice flour.

Therefore, for other rather flat pastries, for example a flatbread or a tarte flambée, you do not need to use other types of flour. Since these pastries do not need to rise much in the oven, you can also use only rice flour.
