  • Glass is particularly easy to clean and durable. As glass is acid-resistant, these moulds are particularly suitable for fruit tarts. In addition, tartes in glass moulds usually become very crispy, but the poor heat conduction can extend the baking time.
  • Cast iron is a very good conductor of heat. Cast iron moulds are acid-resistant and therefore suitable for fruit tarts, but the material does not have a good non-stick effect. Cast iron moulds are also quite expensive and heavy.

A tart ring has the great advantage that you can first roll out the dough and then cut it with the ring. This makes it possible to roll out the dough as thin or thick as you like. The thinner the dough, the crispier the tart.

The great advantage of a tart tin with a lifting base is that you can easily lift the base and thus the tart out of the tin.

There is little risk of the tart breaking or being damaged. However, you should note that tart tins with a lifting base are not suitable for liquid doughs. Closed tart moulds are the most visually appealing, which makes them ideal for serving. The fact that the mould is closed means that nothing can spill out, so it is also suitable for liquid doughs. However, it also makes it more difficult to lift out and cut the tart.
