What do you need vinegar for?
Since vinegar essence is a true cleaning miracle among household remedies, it can be used in many different ways. However, you should never use it on sensitive materials such as marble or aluminium; the acid of the vinegar essence could attack the surfaces within a short time.
What types of vinegar are there?
Wine vinegar is available as white wine vinegar or red wine vinegar. The better the wine used as the starting product, the higher the quality of the wine vinegar. White wine vinegar is mainly made from strong wine varieties such as Pinot Gris, Riesling or Muscadet. The rather milder white wine vinegar goes well with all salads, fish and poultry. Red wine vinegar is usually a little more tart. It is particularly suitable for refining or marinating game and dark meat or for refining red cabbage. However, it also harmonises very well with leaf salads.
Herb vinegar is particularly aromatic. However, herbs are not the starting product for this type of vinegar. Rather, "normal" vinegars become herb vinegars through the subsequent addition of herbs. You should definitely try the "Herb Vinegar" refined with seven herbs and the spicy-mild "Condimento Balsamico Classico" from Kühne with crisp leaf salads, tomato or cucumber salad.
Balsamic vinegar Acetobalsamico is a particularly aromatic vinegar and probably the best-known vinegar in the world. It is made by gently heating grape must. The must thickened in this way is then fermented with the addition of wine vinegar.
The legally protected "Aceto Balsamico tradizionale" may only be produced in two regions of Italy, namely in the Emilia Romagna region and in the Modena region. The maturing time of the "Aceto Balsamio tradizionale", which traditionally matures in wooden barrels, is at least twelve years. The longer the Aceto Balsamico matures, the more valuable and thicker it becomes.
Of course, this has its price. You can recognise the real "tradizionale" by the fact that it can only be sold in 100 ml bottles. The maturing time is much shorter than for "tradizionale". However, a maturing period of at least 60 days must be observed.
