The flour is a purely natural product and therefore suitable for everyone. After several detailed investigations, it has been approved for use in both the food and cosmetics industries. It is considered to be absolutely compatible, unproblematic and may even be consumed by babies.

You are probably already a regular consumer and connoisseur of the product without actually being aware of it. The seeds processed into flour are used in many ways: for example as a binding agent in jams, spreads, jams and products containing gelatine.

Carob bean gum scores less with its abundance of vitamins than with its binding capacity and effect as a satiator. This is due to the composition of many long-chain carbohydrates.

It also contains a lot of dietary fibre, which is why excessive consumption can have a laxative effect. The flour can therefore provide relief for constipation and flatulence.

Intolerances occur only very rarely and in individual cases, because carob bean gum is free of goodness, lactose and cholesterol.

What alternatives are there to carob bean gum?

Carob bean gum helps to bind gluten-free baked goods - the flour serves as a kind of glue and gives the bread a better consistency. Alternatively, you can use guar gum or almond flour, which have a similar effect. If you tolerate gluten anyway, you can use ordinary flour.

In earlier times, almost only the pulp was traded, but now the seeds are in first place.

Production

The oval seeds of the carob tree are the basis of carob bean gum. In the first step, the pulp is removed from them.

There are three ways to do this:

  • Seeds are cooked, followed by manual removal of the pulp
  • Chemical separation with sulphuric acid
  • Roasting in rotary kilns

Once this is done, the endosperm of the seed is ground and processed into kernel meal.

Intended use

As you have probably already noticed, carob bean gum is a true all-rounder. You can prepare any number of dishes with it - basically anything that suits your taste.

The list ranges from salad dressings to ice cream, cocoa drinks and coffee substitutes to cakes and homemade gummy bears.

Independently of the food sector, the product also plays a major role in the cosmetics industry. Here it is used especially in emulsions, as it has the ability to prevent the separation of two liquids or more.

Carob bean gum has the ability to bind one hundred times its own weight. This corresponds to five times the binding power of starch!

It is essential to take this into account in recipes where locust bean gum is used as an alternative binding agent. It is absolutely necessary to adjust the quantities of carob bean gum to the recipe.

Otherwise, the homemade bread will not be fluffy and loose, but will tend to have a glue consistency.

Despite the extra effort required to prepare food, this property of carob bean gum is definitely a positive one: You can get by for a very long time with one packet, as small quantities can already make a big difference.

Preparing food with carob bean gum

The advantage of cooking and baking with locust bean gum is its absolutely neutral taste and smell. It can therefore be used in desserts and also hearty dishes without any problems.

If you want to thicken cold liquids, sauces or dishes with carob bean gum, there are approximate proportions that you can use as a guide. These are clearly listed for you in the table.

Is carob bean gum unhealthy or even harmful?

Carob bean gum was first used in 1925 - and is thus still a relatively young product in the food industry. Even then, the American Food and Drug Administration assured us that the flour was absolutely harmless.

To be on the safe side, tests were nevertheless carried out on rats, which confirmed the same: neither carcinogenic nor toxic effects were detectable in the animals.

It is even said that carob bean gum has a positive effect on cholesterol levels and blood sugar in humans.

In addition, the intake of carob bean gum helps with constipation. This is because the flour cannot be digested by the human body, swells in the stomach and is then excreted.

Notes on carob bean gum

  • Products containing E-410 should not be taken together (at the same time) with medicines. This is because taking them at the same time can impair the effect of the medication, sometimes even weakening it.
  • In rare individual cases, carob bean gum could trigger allergies. Especially in combination with soy products, it is not tolerated by a few people.
