How is vegetable stock powder made?

Flavour enhancers can promote obesity and lead to food intolerance. Especially the flavour enhancer glutamate, also known as E621, is frowned upon and often used.

Preservatives should also be avoided if possible. They can be detrimental to health and cause headaches, diarrhoea and nausea.

Attention: even if it is stated that there are no flavour enhancers, there should also be no yeast in the powder. This is because flavour enhancers can be hidden in it indirectly. This trick would still not make the powder flavour enhancer-free!

What is grained vegetable stock?

On the one hand, we understand grained vegetable broth to be the instant powder for vegetable broths. On the other hand, you can also make your own vegetable stock. In this case, we are talking about finely chopped and dried vegetable scraps that are used as the basis of the soup and as a flavour enhancer.

How do I make vegetable stock myself?

Vegetable broth can be prepared in 3 ways:

  1. Vegetable broth made from vegetables:
    Pour cold water into a pot and cut various vegetables into cubes or slices. Carrots, leeks, onions, celery and other herbs are particularly suitable for vegetable stock. Season with salt and a little pepper. Add these vegetables to the water and let it simmer for about 90 minutes. Now you can remove the vegetables from the broth using a sieve - and your vegetable broth is ready.
  2. Natural grained vegetable broth:
    You can also use the vegetables mentioned above for this. Chop them into small pieces or mix them in a blender. Then put the vegetables in the oven at 70°C for about 8 hours. After the vegetables have dried, you can put them in the blender again, so that they are blended into as fine a powder as possible - and the homemade instant powder is ready!
  3. Instant vegetable broth:
    First boil the plain water and finally add a pinch of the instant powder or a vegetable stock cube. After a few minutes, the powder will dissolve and give the water the good taste of a vegetable broth.

What does pouring vegetable stock mean?

Once you have prepared the vegetable stock, you can of course continue to use it. This further use is called "pouring on". For example, you can add it to a roast to make the sauce tastier. Of course, vegetable stock can also be added to soup or to roast vegetables.

What is the difference between vegetable stock, meat stock and chicken stock?

The difference is actually quite simple. While vegetable broth is made with vegetable stock and thus tastes slightly like vegetables, meat broth and chicken broth are made from the fluids that meat or chicken breast secrete.

Meat broth and chicken broth are not only homemade, but also available as instant powder and in the form of cubes.
However, the taste here is that of meat, not vegetables.
