The Best Vegetable Broth: Our Choices
Guide: Questions you should ask yourself before buying vegetable stock
What is vegetable stock?
Vegetable broth is also known as "clear" soup.
Since boiling vegetables takes a lot of time and is not always that easy, you can also use instant stock cubes or vegetable stock powder for vegetable flavour.
How is vegetable stock powder made?
In industrially produced vegetable stock powders, we distinguish between stock cubes and granulated stock. It is usually a mixture of salt, spices and flavour enhancers. These are usually bound with the help of hardened vegetable oil.
Vegetables themselves are rarely contained in instant vegetable broth.
Vegetable powder basically contains the same ingredients, but they remain loose. This allows the powder to dissolve more quickly and is easier to dose.
What can vegetable broth help with?
Vegetable broth is often used as an alkaline liquid. Fresh soup has a very positive effect on our pH value and thus deacidifies our body. This is particularly beneficial during fasting cures.
Vegetable broth is also excellent for detoxing the body. Several cups a day can improve weight loss results considerably. On the one hand, you avoid dehydration, and on the other hand, the broth provides important nutrients and vitamins.
How much does vegetable broth cost?
If you make the vegetable broth yourself, the cost will of course depend on the ingredients and the quantity used. On average, however, you can expect to pay around 2 - 3€.
|Instant broth powder||1.50€ - 15€|
What alternatives are there to vegetable broth?
Of course, different spices can also be used as substitutes. However, these do not give the broth a vegetable flavour, which is actually crucial for vegetable broth.
Decision: What types of vegetable broth are there and which is the right one for you?
What distinguishes homemade vegetable stock and what are its advantages and disadvantages?
It is obvious that homemade stock is more work and takes more time than buying an instant powder from the supermarket. Nevertheless, the work pays off.
After all, homemade vegetable broth consists of purely natural ingredients and you are aware of everything that ends up in the cooking pot. Accordingly, homemade broth is naturally much healthier. The biggest advantage is that it contains no harmful preservatives.
What are the characteristics of instant vegetable broth and what are its advantages and disadvantages?
Instant vegetable stock, which is available in the form of powder or cubes, has the advantage that it is quickly to hand and can be used immediately. After all, it does not have to be prepared first, like homemade vegetable stock. This saves a lot of time.
The disadvantage, however, is that most instant vegetable broths contain preservatives. In addition, the contents are largely unknown. Since there are usually no vegetables in this grainy broth, it is also not healthy like the homemade vegetable broth.
Buying criteria: You can use these factors to compare and evaluate vegetable broths
In the following, we will show you which aspects you can use to decide between the many possible vegetable broths.
The criteria you can use to compare vegetable broths include:
In the following paragraphs, we will explain what is important in the individual criteria.
In order for the broth powder to be as natural and healthy as possible, it is important to make sure that the following are present:
- Without flavour enhancers and glutamate
- Without preservatives
- Without yeast
Flavour enhancers can promote obesity and lead to food intolerance. Especially the flavour enhancer glutamate, also known as E621, is frowned upon and often used.
Preservatives should also be avoided if possible. They can be detrimental to health and cause headaches, diarrhoea and nausea.
Attention: even if it is stated that there are no flavour enhancers, there should also be no yeast in the powder. This is because flavour enhancers can be hidden in it indirectly. This trick would still not make the powder flavour enhancer-free!
More and more often, customers express that bouillon cubes and powders should be vegan, vegetarian, gluten-free or lactose-free. Accordingly, the food industry is following these trends and more and more stock cubes are being produced organically.
It is simply a matter of paying attention to the ingredients. Of course, it is always important to ask what is contained in the individual ingredients; this does not have to be stated.
With vegetable stock powder or cubes, it is important that the product dissolves as quickly as possible in hot water and that no residue remains. The better the powder dissolves, the more flavour is naturally transferred to the broth. It can also be annoying when eating if there are small powder residues in the broth.
Vegetable broth can be bought in the form of powder or cubes. You should decide for yourself which you prefer:
The powder has the advantage that you can choose individually how strong you want the flavour to be. Accordingly, it is possible to add less or more powder to the broth.
Stock cubes are also very practical for a vegetable stock. They are small and compact and cannot be spilled.
Facts worth knowing on the subject of vegetable stock
What is grained vegetable stock?
On the one hand, we understand grained vegetable broth to be the instant powder for vegetable broths. On the other hand, you can also make your own vegetable stock. In this case, we are talking about finely chopped and dried vegetable scraps that are used as the basis of the soup and as a flavour enhancer.
How do I make vegetable stock myself?
Vegetable broth can be prepared in 3 ways:
|Method of preparation||description|
|Vegetable broth made from vegetables||boil vegetables and extract the broth|
|Homemade grained broth||vegetables are chopped and dried€|
|Instant grained broth||instant powder from the supermarket|
We will explain in more detail below how to prepare the vegetable broth individually:
- Vegetable broth made from vegetables:
Pour cold water into a pot and cut various vegetables into cubes or slices. Carrots, leeks, onions, celery and other herbs are particularly suitable for vegetable stock. Season with salt and a little pepper. Add these vegetables to the water and let it simmer for about 90 minutes. Now you can remove the vegetables from the broth using a sieve - and your vegetable broth is ready.
- Natural grained vegetable broth:
You can also use the vegetables mentioned above for this. Chop them into small pieces or mix them in a blender. Then put the vegetables in the oven at 70°C for about 8 hours. After the vegetables have dried, you can put them in the blender again, so that they are blended into as fine a powder as possible - and the homemade instant powder is ready!
- Instant vegetable broth:
First boil the plain water and finally add a pinch of the instant powder or a vegetable stock cube. After a few minutes, the powder will dissolve and give the water the good taste of a vegetable broth.
What does pouring vegetable stock mean?
Once you have prepared the vegetable stock, you can of course continue to use it. This further use is called "pouring on". For example, you can add it to a roast to make the sauce tastier. Of course, vegetable stock can also be added to soup or to roast vegetables.
What is the difference between vegetable stock, meat stock and chicken stock?
The difference is actually quite simple. While vegetable broth is made with vegetable stock and thus tastes slightly like vegetables, meat broth and chicken broth are made from the fluids that meat or chicken breast secrete.
Meat broth and chicken broth are not only homemade, but also available as instant powder and in the form of cubes.
However, the taste here is that of meat, not vegetables.
